Potato Staxxx for my valentine

First Valentines Day dinner with my babe @truthtea was a huge success. This was my first attempt at cooking both lamb chops and these lil potato staxxx. I ended up treating myself and bought a mandolin after watching a video on ratatouille and these parmesean potato stacks.

Preheat your oven to 375°F and start slicing up the spuds. I had some issues at first when the recipe called to use the thinnest setting on the mandolin but this became quite troublesome in that the gold potatoes I used were quite large which resulted in very uneven slices. I bumped it up to the next level up and was golden. I found myself left with very wet potatoes so I tried to dry them up as best I could using paper towels. 

Once sliced, I tossed them in a bowl with salt, pepper, garlic powder and fresh thyme leaves. I then took a microplane to a nice wedge of parmesan reggiano. Valentines is not a day to skimp out on cheese. So the video I linked earlier calls to use muffin tins coated in butter but my large slices made it quite cumbersome to get a nice even stack. The potatoes pictured above were stacked on your standard baking tray and I thought they came out pretty nice. 

Bake for 55 minutes to an hour while you work on the pistachio crusted lamb chops you'll be making. Remember the goal is to blow the panties clean of your lady friend. Once baked, (you'll know cause they smell and look amazing) plate them up and shred some more of that parmesan from earlier. I sprinkled some fresh thyme leaves over it cause I think that's a thing people do. This is such a delicious recipe and was stoked to be able to successfully make these for my special lady.
